Recipe Monday

So instead of doing a recipe today, I am going to discuss a different way of cooking.

It's called a smoker - and I used it last night for the first time.

It's works off of wood chips (that you buy at the store) and slow cooks the food to give it a mesquite taste. There is a coil in the bottom that heats up the wood, which in turn helps to heat the canister and slow cook whatever you put inside.

We did chicken. The smoker makes the skin tough so we took it off and just ate the meat, which is better for you anyway.

It took about half an hour for the smoker to heat up, and once it did we left the chicken smoke for about 3 hours before putting it in the oven to finish. There is a pan in the bottom for water, so the meat doesn't dry out - we added water and a bit of white wine. We just put the chicken in plain and it came out very tasty.

Served with baked beans, potato salad and rolls it was a nice break from oven baked chicken. It gave us a "grilled" taste without D having to stand outside and freeze. Once you put the lid on you can leave it be, with very little supervision, until the food is done.

Next time we might do ribs. I also wanted to try the chicken with a rub on it.
